Ingredients
Green + Shishito Peppers
1 green pepper (from GVY Fresh Produce), julienned
4 shishito peppers (from Urban Roots), julienned
2 tsp of sesame oil
2 tsp of KBBQ Seasoning (from TonzKitchen)
Caramelized Onions:
1 sweet onion (from Enchanted Gardens), julienned
2 tsp of sesame oil
2 tsp of KBBQ Seasoning (from TonzKitchen)
Shiitake Mushrooms
1 bunch of shiitake mushrooms (from Northwood Mushrooms), julienned
2 tsp of sesame oil
2 tsp of KBBQ Seasoning (from TonzKitchen)
Seasoned Chinese Broccoli
2 cups of Chinese broccoli (from GVY Fresh Produce), blanched and chopped
2 tsp of sesame oil
2 tsp of sesame seeds
Carrots
1 cup of carrots (from Dawn2Dusk Farm), julienned
2 tsp of sesame oil
2 tsp of KBBQ Seasoning (from TonzKitchen)
Zucchini
1 large zucchini (from Prairie Hallow Farm), halved and cut into 0.5 inch slices
2 tsp of sesame oil
2 tsp of KBBQ Seasoning (from TonzKitchen)
Gochujang Sauce
2 TB of gochujang
1 TB of soy sauce
2 tsp of sesame oil
1 TB of rice wine vinegar
½ tsp of garlic powder, pinch of salt & pepper
2 Cups of cooked white rice
Optional additions:
Fried Egg (eggs from Sunshine Harvest Farm)
Scallions (from Kisheri Farms), finely chopped
Sesame Seeds
Kimchi (from Mhonpaj’s Garden)
Hot Chili Oil (from TonzKitchen)
Instructions
- Wash and cook the white rice
- Prepare and sauté the vegetables in a large frying pan. Cook each vegetable separately, as they may have different cooking times. Once cooked, set aside to cool.
- For the Chinese broccoli: Bring a pot of salted water to a boil. Blanch the broccoli for 4–5 minutes, then transfer to an ice bath to stop the cooking process. Once cooled and drained, toss with sesame oil and sesame seeds. Set aside.
- (Optional) Finely chop scallions for garnish.
- Make the sauce: In a mixing bowl, whisk together gochujang, soy sauce, sesame oil, rice wine vinegar, garlic powder, and salt and pepper to taste. Set aside.
- (Optional) Fry an egg, sunny side up.
- Assemble the bowl: Start with a base of rice. Arrange sautéed vegetables and Chinese broccoli on top. Drizzle with the gochujang sauce. Add the optional fried egg on top. Garnish with chopped scallions and sesame seeds, if using. Option to add kimchi for extra flavor or chili oil for extra heat.
- Mix well and enjoy!
