The Best B.L.T.

Ingredients
- Roasted Garlic Aioli
- Roasted Garlic
-1 bulb of garlic (from Mom’s Garden)
– 1 TB of olive oil
– ½ tsp of kosher salt - 1 cup of mayo (kewpie)
- 2 TB of lemon juice
- 2 tsp of parsley (from Urban Roots)
- Salt and pepper to taste
- Optional: 1 TB of hazelnut oil (from Hazel Heart Farms)
- Roasted Garlic
- Caramelized Onions:
- 1 sweet onion (from Kisheri Farms), julienned
- 2 TB of hazelnut oil (from Hazel Heart Farms)
- BLT Fixings
- 1 lb of bacon (from Sunshine Harvest Farm)
– 2 TB of brown sugar rubbed on prior to baking - 2 heirloom tomatoes (from Nistler Farms)
– Sliced into ½ in slices, seasoned with salt and pepper - 8 slices of bread (from Bakers Field Flour), toasted
- 4 oz of sheep’s cheese (from Shepherd’s Way Farm)
- 4 cups of “kitchen sink” salad mix (from Burning River Farm)
- 1 lb of bacon (from Sunshine Harvest Farm)
Instructions
1. Roasted Garlic Aioli
- Preheat oven to 400°F
- Cut the top of the garlic bulb off, exposing the tops of the cloves inside
- Pour olive oil and salt on top, then wrapping aluminum foil around
- Roast in oven for 35-40 minutes, removing after to let cool for 15 minutes
- In a mixing bowl, add your mayo, lemon juice, salt/pepper, cooled/roasted garlic cloves,
parsley and hazelnut oil. Whisk to combine, taste and adjust seasoning if needed.
2. Brown Sugar Bacon
- Preheat oven to 400°F
- Place bacon on baking sheet, rub with brown sugar.
- Bake for 20 minutes, or until bacon is cooked to preferred crispiness
- Set aside to cool and drain from fat
3. Caramelized Onions
- Take thinly sliced onions to a frying pan over medium heat and 2 TB of hazelnut oil
- Sauté and begin to sweat/cook down the onions.
- Add a pinch of salt and pepper and let it caramelize (takes about 30-45 minutes).
- Set aside to cool once caramelized.
4. Assembling the BLT
- Place aioli on one side of toasted bread
- Assemble as necessary with bacon, tomato slice, lettuce mix, and caramelized onion
- Place sheep’s cheese and even more aioli on other toasted slice of bread
- Cut, if preferred, and enjoy!
