The Best B.L.T.

1. Roasted Garlic Aioli

  • Preheat oven to 400°F
  • Cut the top of the garlic bulb off, exposing the tops of the cloves inside
  • Pour olive oil and salt on top, then wrapping aluminum foil around
  • Roast in oven for 35-40 minutes, removing after to let cool for 15 minutes
  • In a mixing bowl, add your mayo, lemon juice, salt/pepper, cooled/roasted garlic cloves,
    parsley and hazelnut oil. Whisk to combine, taste and adjust seasoning if needed.

2. Brown Sugar Bacon

  • Preheat oven to 400°F
  • Place bacon on baking sheet, rub with brown sugar.
  • Bake for 20 minutes, or until bacon is cooked to preferred crispiness
  • Set aside to cool and drain from fat

3. Caramelized Onions

  • Take thinly sliced onions to a frying pan over medium heat and 2 TB of hazelnut oil
  • Sauté and begin to sweat/cook down the onions.
  • Add a pinch of salt and pepper and let it caramelize (takes about 30-45 minutes).
  • Set aside to cool once caramelized.

4. Assembling the BLT

  • Place aioli on one side of toasted bread
  • Assemble as necessary with bacon, tomato slice, lettuce mix, and caramelized onion
  • Place sheep’s cheese and even more aioli on other toasted slice of bread
  • Cut, if preferred, and enjoy!
