Just like great wine reflects the land it’s from, our vinegars carry the character of Minnesota’s breweries and distilleries.
I feel that when you go to the store or farmers markets you see the same sweet balsamic style vinegars just about everywhere. My vinegars are nothing like that style and are truly really darn unique when it comes to the flavors and production method. A lot of vinegar makers at markets will buy mass produced balsamic vinegars from big companies and just infuse different flavors into them, not really doing any of the fermentation work themselves. Northland Vinegars bucks that trend and starts with some of the best craft made alcohols from Minnesota and ferments them into a raw, living probiotic vinegar. Nobody else in the midwest is doing that right now.
