Radishes are one of the first crops available after a long winter, filling up farmers market tables in May and June. Throw together these Quick Pickled radishes in just a few minutes and serves as a crunchy, flavorful topping for Crispy Polenta Wedges, rice bowls, salads, sandwiches, tacos, and more!

Quick Pickled Radishes

Ingredients

  • 1 bunch radishes, greens removed and thinly sliced
  • 1/2 bunch green onions, cut into small pieces
  • 2 teaspoons salt
  • 3 Tablespoons rice vinegar, apple cider vinegar, or other light vinegar
  • 1 Tablespoon ginger lemon shot from Pure Ginger for You, optional

Instructions

Combine sliced radishes, chopped green onions and salt in a bowl (don’t be shy, salt helps to draw water out so they can pickle). Cover with vinegar and a splash of  ginger shot from Pure Ginger for You for extra flavor. Let sit for about an hour to pickle.
